Halloumi Lasagna

Ingredients


  • Yelllow onion, 1
  • Garlic, 1 clove
  • Rapeseed oil, 1 tblsp
  • Tomato paste (tomatpuré), 3 tblsp
  • Crushed tomatoes, 500 g
  • Liquid honey, 1 tsp
  • Vegetable bouillon cube, 2
  • Dried tyme, 1 tsp
  • Water, 4 dl
  • Frozen spinach leaves, 200 g
  • Salt
  • Pepper
  • Halloumi, 400 g
  • Lasagna plates, 200 g
  • Pumpkin seeds, 1.5 dl
  • Grated cheese, 1.5 dl

Instructions


  1. Preheat the oven to 225°C
  2. Finely cut the onion and garlic
  3. Sauté the onion and garlic without them getting any color
  4. Add tomato paste, crushed tomatoes, honey, bouillon cubes, tyme, and water
  5. Boil on medium heat without a lid for 5 min
  6. Add spinach and boil for anouter 5 min
  7. Add salt and pepper to taste
  8. Cut the halloumi in thin slices
  9. Alternate the tomato sauce with the lasagna plates, pumpkin seeds, and halloumi in an ovenproof dish. Start and stop with tomato sauce
  10. Add grated cheese on top
  11. Bake in the middle of the oven for 20 min
  12. Add some extra tyme and pumpkin seeds on top before serving
