Halloumi Lasagna

Ingredients
- Yelllow onion, 1
- Garlic, 1 clove
- Rapeseed oil, 1 tblsp
- Tomato paste (tomatpuré), 3 tblsp
- Crushed tomatoes, 500 g
- Liquid honey, 1 tsp
- Vegetable bouillon cube, 2
- Dried tyme, 1 tsp
- Water, 4 dl
- Frozen spinach leaves, 200 g
- Salt
- Pepper
- Halloumi, 400 g
- Lasagna plates, 200 g
- Pumpkin seeds, 1.5 dl
- Grated cheese, 1.5 dl
Instructions
- Preheat the oven to 225°C
- Finely cut the onion and garlic
- Sauté the onion and garlic without them getting any color
- Add tomato paste, crushed tomatoes, honey, bouillon cubes, tyme, and water
- Boil on medium heat without a lid for 5 min
- Add spinach and boil for anouter 5 min
- Add salt and pepper to taste
- Cut the halloumi in thin slices
- Alternate the tomato sauce with the lasagna plates, pumpkin seeds, and halloumi in an ovenproof dish. Start and stop with tomato sauce
- Add grated cheese on top
- Bake in the middle of the oven for 20 min
- Add some extra tyme and pumpkin seeds on top before serving
