Fyriskaka (Apple Sponge)

Ingredients
Cake
- Softened butter, 125 g
- Caster sugar, 150 g
- Eggs, 2
- Flour, 2.5 dl
- Baking powder, 0.5 tbsp
- Milk, 2 tbsp
- Butter and breadcrumbs for the tin
Garnish
- Apples, 3
- Caster sugar, 1-2 tbsp
- Ground cinnamon (optional), 1 tsp
Instructions
- Preheat the oven to 175°C
- Grease and crumb a round springform tin, approximately 24 cm in diameter
- Beat the butter and sugar until fluffy.
- Add the eggs, followed by the flour, baking powder, and milk
- Pour the batter into the tin
- Peel the apples, cut them into thin wedges, and stick them into the batter
- Sprinke over the sugar and cinnamon mix
- Bake in the bottom half of the oven for 30-40 min
Notes
Add saffron for a Christmas variant.
