Fyriskaka (Apple Sponge)

Ingredients


Cake

  • Softened butter, 125 g
  • Caster sugar, 150 g
  • Eggs, 2
  • Flour, 2.5 dl
  • Baking powder, 0.5 tbsp
  • Milk, 2 tbsp
  • Butter and breadcrumbs for the tin

Garnish

  • Apples, 3
  • Caster sugar, 1-2 tbsp
  • Ground cinnamon (optional), 1 tsp

Instructions


  1. Preheat the oven to 175°C
  2. Grease and crumb a round springform tin, approximately 24 cm in diameter
  3. Beat the butter and sugar until fluffy.
  4. Add the eggs, followed by the flour, baking powder, and milk
  5. Pour the batter into the tin
  6. Peel the apples, cut them into thin wedges, and stick them into the batter
  7. Sprinke over the sugar and cinnamon mix
  8. Bake in the bottom half of the oven for 30-40 min

Add saffron for a Christmas variant.
